Maple sugar is the remainder of the juice of sugar maple when boiling longer than the required duration to obtain maple syrup and maple candies. After almost all water is vaporized, a solid sugar remains. The content of this sugar includes nearly 90% sucrose, and the rest part consists of various amounts of glucose and fructose. It is typically formed as pressed blocks or semitransparent candies. It is used as a flavor for maple products and can serve as an alternative of the cane sugar. Maple sugar is two-fold sweeter than the common granulated sugar.
